There are only a few restaurants I go to in Saratoga Springs, and one of them is Karavalli. Owner/Chef Santhosh Kochuparambil and Chef Shaji Scaria are both from the Kerala region of India, and their cooking is authentic. They make everything from scratch, including getting spices imported from India and grinding them fresh. The lunch buffet has the best price/quality ratio of any restaurant in town. I have had several dinner parties there, and the menus created were some of the best dining experiences I have ever had. Indian cuisine is one of the great cuisines of the world, and people should experience it in its authentic form. My favorites: fried cauliflower, onion fritters, rack of lamb, fish in banana leaf, fish molee, chicken tikka masala . . . the list goes on. For vegetarians and fish lovers, it is a must-go; for everyone else . . . well, you should go, too. The wait staff are friendly and warm, and going to Karavalli is like going to another country, as the wait staff are all from India. Can you tell that I like it there . . . a lot?
