Introduction to Recipe section
I was born in an area called Goose Hill. Reason being, before there where houses, it was a goose farm. The city was Schenectady, in the fair state of New York.
My Family owned an import store down by the railroad tracks. My Grandmother Lucy and Grandfather Gelsano operated the store, where they made pasta, tomato sauce, mozzarella, sausage, dried salami, prosciutto and lots of smiles from their friends the customers. I remember being very young and thinking my grandparents had to be magical because they could do so many things so well. Build houses and stores, grow gardens and bake bread. They knew so much that I wanted learn. They taught me, they loved me and they fed me.
On weekends the whole family got together to play games, make music and eat.
Big trays of Italian meats and cheeses along with fresh roasted peppers, olive oil and crusty bread started our afternoon meal. Depending on the season we enjoyed steamed artichokes dipped in lemon butter or asparagus or broccoli rabe.
We would participate in games of baseball, bocce (lawn bowling) in summer, counting and card games in winter. In the evening the table was filled with pastas, cacciatore, parmigiana, and the air was filled with music.
My dream of having a restaurant, with music, stems from these wonderful childhood memories. The use of locally grown ingredients came naturally.
The reality came when faced with having my children grow older and wander off. I guess you could call it a mid-life crisis of a sort. After finding a subterranean space in the middle of the city of Saratoga Springs, my family and I proceeded to transform this leaky, dingy, dungeonous room into a usable, cozy, romantic nightspot. The music venue chosen was the wonderful sounds of American Jazz from the 30’s and 40’s. The food was Italian based, whaffed with the flavors of the Deep South. Later on we introduced French and Thai influences. I believe the menu items to this day are a mainstay to both One Caroline Street Bistro and Saratoga Springs. I will be adding recipes on an on going basis.
This is why I feel it is time to share these recipes with all our loyal customers and friends..
